Chef Tackles Food Science
A new offshoot of 1808 American Bistro in Delaware will bring Central Ohio one of its first tastes of molecular gastronomy.
Vino Veritas Tavern, located at 15 E. Winter St., will be headed up by longtime 1808 chef Joshua Dalton. He says to expect housemade sodas, barrel-aged cocktails and twisted classics. Think drinks like a fizzed-up Negroni (shot through a Perlini cocktail system to carbonate the cocktail without diluting it) or a spherified drop of lemon liqueur in a Lemon Drop.
The bar will also have a small-plates-intensive menu, with dishes changing as often as the fresh ingredients do. “If you come in on a Tuesday, don’t expect the same thing on Saturday,” Dalton says.
