Espresso is coffee on overdrive—a tiny, intense morning pop made by forcing hot, pressurized water through fine grounds. Properly steamed milk adds Dean Martin cool to espresso’s Jerry Lewis jolt. It mellows flavors, adds texture and prolongs the experience, says Dave Forman of One Line Coffee in the Short North. “It’s rich but also light and fluffy,” he explains. “It shouldn’t taste like foam but like fatty milk with interesting texture.” Forman runs through One Line’s sliding scale of traditional, and properly crafted, espresso drinks.
