The latter includes quinoa sliders that have been smoked to give them a boost of flavor typically reserved for meat. "That rich, earthy, smoky flavor-in vegan and vegetarian dishes you often lose it," Johnston says. He also wants to bring touches of Columbus' German and Midwestern heritage to traditional barbecue, as in pulled pork served with a white horseradish barbecue sauce and topped with pickle relish. Strongwater will offer dinner Tuesday through Saturday, with hopes to eventually add lunch and brunch during the 400 West Rich farmers market.
