After inking a deal in late June, chef William Glover of Sage American Bistro will be taking on executive chef duties at the under-construction Hilton Columbus Downtown, which will open on High Street in October.

Glover will be retaining his role as executive chef at the much-lauded Sage as well as helming the hotel's new French bistro-inspired restaurant, Gallerie, alongside former Martini Modern Italian general manager Michael Mejia. Glover says he's begun menu development and will now start putting together a staff for Gallerie, which will be his second restaurant. In addition to the place's French focus, the menu will include locally sourced ingredients.

"When you look at major markets, like Las Vegas, every hotel has a major celebrity chef restaurant, but hotel restaurants can be problematic, because you want to leave and go out to eat," Glover says. "But the approach here is to focus on local, someone with a local reputation, good food and a good team."

Glover will be turning over day-to-day operations at Sage, however.
