Sometimes a particular meal that you remember tasting amazing doesn't quite hold up when you try it again years later. So I was a little nervous to try the Scallops at Gallerie, the Bill Glover-helmed restaurant inside the Hilton Downtown.

Sometimes a particular meal that you remember tasting amazing doesn't quite hold up when you try it again years later. So I was a little nervous to try the Scallops at Gallerie, the Bill Glover-helmed restaurant inside the Hilton Downtown.

That's the dish, after all, that everyone raved about back when his first restaurant, Sage, opened in 2008. And it's a dish that I loved so much I often had to talk myself out of ordering it so I could try Glover's other dinner creations. When the scallops popped up on the menu at Gallerie, though, I decided to order them to see if any of that magic had worn off.

It's a sweet dish, pairing seared sea scallops with a dollop of blackberry ketchup and a beurre blanc sauce, plus crispy polenta and bok choy. Yes, this preparation is identical to the later versions served at Sage. For Glover super-fans like myself hopeful Gallerie might offer a completely different dining experience, that's admittedly a tiny bit disappointing. But for the uninitiated, it's terrific news--just as revelatory as it was way back when.
