Make room in your weekend dining schedule now: starting Friday night, Matthew Heaggans and the crew from Swoop! Food Truck will officially take over the kitchen at the Hey Hey Bar & Grill.

Swoop hit the road last summer, and since then, it's been a steady presence at places like Dinin' Hall and Seventh Son. The truck's known for gourmet takes on low-brow foods like corn dogs, tater tots and sliders-a perfect fit for the Hey Hey's divey vibe.

The advantage of the bar set-up is having a full-scale prep kitchen, giving Heaggans the opportunity to prep dishes like his take on a loaded baked potato: potato chunks cooked confit-style in olive oil and butter and topped with bacon powder, grated parmesan, scallions and creme fraiche.

"When you bite into it, it's just this buttery, recognizable flavor, and it's totally blockbuster," he says.

The German Village neighborhood bar is continuing to lend its kitchen to food trucks taking steps toward brick-and-mortar restaurants-it had previously housed Angie Theado's inventive Coop and her yak burgers. But Theado departed the kitchen in July and, on Friday, announced plans to open a full-service cafe at 2701 Indianola Ave. in Clintonville in 2014.

Heaggans hopes someday to move to his own cafe, too, but for now, he says this is the perfect arrangement. The truck will still be out on the streets (and it will still be the only place to get Swoop's beloved tater tots-Heaggans says they're too labor-intensive to make the volume he'd need to feed sit-down crowds), but this is an opportunity to introduce Swoop's food to a new customer base.

For now, Swoop will start with Thursday, Friday and Saturday evening hours, but plans to expand to brunch and into the week are on the horizon. -Carrie Schedler
