But for Angry Bear Kitchen chef-owners and former Latitude 41 cooks Daniel Scalzo, Tyler Minnis and Jarod Norris, the fantasy became reality. Their Old North space is nothing fancy-brick walls, Mason jar pendants and tattooed servers wearing their own civilian clothes. But the plates are impressive. The guys are doing modern nose-to-tail and farm-to-fork-and they threw out the rulebook. Who says you can't toss fried sweetbreads in hot sauce, Buffalo-style? Or sear rye bread on salmon for the ultimate crispy "skin"? They've got skills, but it's the sense of humor we're loving.
