The inaugural food truck-Land Yacht BBQ, a barbecue-focused truck built out of a 1963 Airstream-will open its windows at 11 a.m., and serve through sellout (or roughly until about 8 or 9 p.m.).
The truck is the brainchild of Haydocy Automotive Group owner Chris Haydocy, who wanted better dining options in his neighborhood. So he decided to create his own. "What [kind of restaurants] do we need? We need all of them," he says, adding the food park is the solution "to get the diversity we need."
The food park (the name is still in the works) is modeled after similar popular food truck collectives in San Francisco and San Antonio. There will be plenty of picnic table seating and parking for diners on the 1.3-acre lot (nearly twice the size of other food parks) located at the dealership at 3865 W. Broad St. It's enough room to host eight trucks in all, so expect Land Yacht to be the first of many Haydocy-owned food trucks opened throughout the season.
Popular Columbus food trucks will also be invited to serve on the property, says Brian Young, manager of the food park and the culinary mind behind Land Yacht's southern-inspired dishes. Barbecue has been the chef's passion for as long as he can remember.
Inside the Airsteam (fitted with a Las Vegas-style sign), there's a smoker big enough to hold 240 pounds of meat. This is where Young will be slow-cooking his brisket, along with other specialties. He'll be curing Blues Creek Farm Meats lamb to add into a smoky lamb bacon mac and cheese. And he'll be deep-frying graham cracker and brown sugar crusted marshmallows for a gooey fried s'mores dessert.
The next phase of plans include a stage built out of an Airstream (for live music and possibly seating), a deli-diner food truck concept (also built out of an Airstream), and possibly a bar serving local beer and wine, if licensing works out. (At the very least, Young and Haydocy hope to get permits for BYOB inside the park). More Airstream concepts will roll out as the park grows.

-Slow Cooked Beef Brisket – a half-pound carved hickory smoked brisket served naked or w/ a choice of side
-Crispy Seasoned Chicken Drummies – three drummies tossed in a choice of sauce
-Lamb Bacon Mac and Cheese in smoked cheddar cream sauce
-Chipotle Black Bean Burger – black beans, rice chipotle mayo, lettuce, tomato and onion
