The Butcher's Baker is the working title of the restaurant at 1023 E. Sixth Ave. that will combine the butchering and cooking skills of Kraus with the baking talents of Matt Swint, who operated PerZoot food truck and recently changed the name of his bread and baked goods business to Matija Breads. ("I honestly think he's going to be one of the best bakers in the country," Kraus says of Swint.)

It will be a wood-fired, sustainable restaurant sourcing nearly 100 percent from Ohio. "If you can't find it in the state, we won't have it on the menu," Kraus says, with the exception of a few items, like chocolate in pastries. And everything will be made from scratch, he adds, all the way down to the butter in the baked goods. There are also plans to plant a garden to supply produce for the restaurant.

Expect the menu to change weekly, with the exception of a few signature items. There will be one or two specialty pizzas coming out of a Spanish-style wood-fired pizza oven, house-made charcuterie and a menu of roughly 15 plated dishes and salads.

"Everything will be 100 percent open," Kraus says of the restaurant layout. "From where Matt stands [at the pizza oven] and where I stand [at the grill] you'll be able to see everything," Kraus says, adding they may add a few seats near the pizza oven and grill pit so diners can get an up-close view of the action.

The hope is to start serving breads and baked goods for retail sales sometime in late June or July. The restaurant will follow, ideally opening on Saturday, Nov. 1, and will then be open Wednesdays to Saturdays from 4 p.m. to midnight. The bakery will be open during the day, with possible appearances by That Food Truck.

For now, Kraus-who was a 2013 Crave Tastemaker-is finalizing the contract and plans, and working on getting a liquor license to serve beer, wine and liquor, with an emphasis on all Ohio beer and wine.
