Brewery district restaurant T. Murray's has closed, but won't stay dormant for long. Dive bar concept Three Sheets is scheduled to open at 560 S. High St. within the next four to six weeks.

Co-owners Jenny Adams, Bryan Kilpatrick and Missy Adams got the keys to the restaurant earlier this week, and plan to spend the next month flipping the space from a classy restaurant to a lowbrow bar. "We want to respect the building and the woodwork," says Jenny, adding changes will be purely aesthetic, including adding high top tables, dart boards, pool tables upstairs and TVs. Patio seating will be replaced by a standing rail to encourage socializing outside. "[We just want to] dive it up a bit."

A veteran of front-of-house and bar management, Jenny turned to chef Mike Gadd (whom she had worked with at Manifesto) for advice on how to run a kitchen. When she found out he and business partner Tomos Mughan-who launched empanada-inspired-concept Bolsanada last year-had been looking for a kitchen, Jenny invited them to work out of the Three Sheets space.

So in addition to Bolsanada, which will soon be sold wholesale at local grocery stores, Gadd will serve a tight menu of roughly 10 high-end bar food dishes. There will be a handful of staples, including burgers, fries and wings, Gadd says, but the rest will rotate with the chef's whim. "Everything will be made in house. Plus there will be some whimsical things," he adds. For example, he plans to serve a sous vide pork belly poutine with a cheese sauce instead of cheese curds.

Instead of table service, the owners are thinking diners will place orders with a bartender and receive a buzzer that will vibrate when their order is ready. Then diners will walk up to the kitchen window to pick up their food.

Jenny, who'll be running the bar program, plans to offer local craft beers and a craft cocktail list with an emphasis on absinthe cocktails. There will also be an emphasis on happy hour with discounted food from 3 to 6 p.m. and alcohol from 3 to 9 p.m.

Jenny managed and bartended at Novak's until the bar closed for a remodel. At Three Sheets, she wants to recreate the neighborhood feel Novak's used to have. "They've got nothing like this down here," Jenny says. "I've lived here 12 years. The village needs a couple of good bars."
