First Course

Foie gras torchon rolled in crispy prosciutto, with chilled melon consommé, and blackberry gochujang sauce.

Second Course

Smoked Pacu fish ribs. Fejoida jus. Crispy rice. Pequillo peppers. Jerez vinaigrette. Marcona almond espuma.

Third Course

Crispy rockfish. Sautéed shrimp. Arugala, Zucchini, squash, and tomato ragu, black sesame oil, dehydrated olives.

Fourth Course

Roasted local peach galette. Vanilla bean ice cream
