The new wine and cocktail bar from Annie Williams Pierce and Luke Pierce also will offer a small menu of snacks and small plates.
One of the nation’s most imaginative bartenders plans to open her own bar in a flourishing area of Columbus. This week, Annie Williams Pierce and her husband/business partner, Luke Pierce, announced that Law Bird is coming to 740 S. High St., formerly Village Pet Supply. The new Brewery District bar adds more talent to an increasingly exciting area of South High Street, which includes the new restaurant Ambrose and Eve and sour brewery/cocktail bar Antiques on High.
“We absolutely love what is happening on this stretch,” the Pierces said in an email on Tuesday, adding that they are excited to help make “the area a new destination district for Columbus as well as provide another quality space for the immediate neighborhood.”
Williams Pierce brings with her a bartending resume that includes Brothers Drake Meadery, The Sycamore, The Crest Gastropub and now-shuttered Curio. She and Pierce are also co-founders of Four Thieves Thirst Parlour, a speakeasy pop-up that led to Williams Pierce being named a Columbus Crave Tastemaker in 2015.
In 2017, Williams Pierce won the United States Bartenders Guild’s Most Imaginative Bartender competition. That year, she travelled to London to compete in the North American finale, where she beat out 11 other bartenders and became the first woman to win the competition.
The Pierces said Law Bird will be a wine and cocktail bar that works to debunk “the idea that wine is stuffy and stiff.”
“We want to encourage people to try new varietals or expressions, learn new things both about wine and their own palate, and genuinely enjoy the true diversity of how unique wine can be,” they said.
Law Bird’s cocktail program, meanwhile, will carry on the couple’s penchant for “pairing unusual flavors together in unexpected ways, always focusing on that ‘weird, but good’ balance that we love so much.” The Pierces are also developing a tight menu of “quirky and complementary” snacks and small plates designed to pair with the drink offerings.
