Edible Art: Pistacia Vera

Columbus Alive

Where: Pistacia Vera - inch per inch and pound for pound, Pistacia Vera's world-class delicacies are as good or better than anything else ever in this town. Now you can enjoy a sampling of them while sitting with a nice coffee or tea in Pistacia's beautiful and modern German Village-located bakery/store/little treat eatery.

What: Bittersweet Pistachio Feuilletine

Artistic kinship: The pastry paintings of Wayne Thiebaud and a hint of Gustav Klimt's gold glint

Of course Pistacia Vera had to be in this story, as its glorious bakery desserts reign supreme in Columbus. But while greedily gazing at Pistacia's glass cases gleaming with sculptural and jewel-looking sweets, I found it damn near impossible to pick just one. So I went with something featuring the place's namesake nut.

Above a feuilletine (almost Nestle Crunch-like base) is a layer of perfectly calibrated bittersweet chocolate mousse capped by a pistachio-green white chocolate "mirror glaze" adorned with a bit of edible gold foil. Circumscribing the exterior of this cake-like confection is a crispy rim of toasted pistachios. The varied but complementing tastes and textures eat as pretty as its picture.
