Mediterranean Hummus at Natalie's Coal-Fired Pizza

Hummus is a perfectly good, good-for-you appetizer, but not usually something to get all excited about. So I wasn't getting my hopes up when, during a recent dinner at the newish Natalie's Coal-Fired Pizza, I chose the Mediterranean Hummus appetizer over the mac-and-cheese one in an effort to incorporate more veggies into my life. Well, let me tell you, this hummis is really good. So good I continued eating it with a fork once all those carrots and celery sticks were gone.

This stuff is made-in-house using all the typical ingredients (chickpeas, tahini, roasted garlic, olive oil, lemon juice) plus cannelini beans, which I believe made it creamier than other versions. Somehow, they got the proportions of all those ingredients just right -- a little extra oil and lemon juice made it feel decadent rather than dried out, and it's nicely seasoned with salt and fresh ground pepper.

And going for the hummus over the mac-and-cheese means you'll have room for a slice or two more of Natalie's terrific pizza.
