Cameron Mitchell heads for The Joseph

It's been one of the worst kept secrets in town-that Cameron Mitchell Restaurants had agreed to open a restaurant inside the Short North's forthcoming boutique hotel. Today, the secret is officially out, and with new details on the eatery's name and concept.

The Guild House will be a farm-to-table concept at Le Méridien Columbus, The Joseph. The 6,000-square-foot restaurant will offer seating for 140 guests and will serve breakfast, lunch and dinner. There will also be a bar and private dining room for 10.

The name is an ode to the chefs on the CMR development team-nicknamed the "culinary guild"-who are teaming up to craft dishes for the restaurant. The idea is to showcase a sort of best-of-the-best of CMR cooking. "It's about a compilation of our chefs-an artistic guild within our company and a body of work in this restaurant," says CMR founder Cameron Mitchell. "It's the whole team putting this together. It's going to be fun. We're excited about it."

Executive corporate chef Brian Hinshaw leads the culinary efforts in the CMR test kitchen. He's said that The Guild House could source around 60 percent of its ingredients locally. That's more local sourcing than any other CMR concept to date. But CMR's take on a farm-to-table restaurant isn't limited to the best of the Midwest. Members of the executive team have said the menu will offer a global approach, looking to showcase the best products available, period. The wine list will also pull from around the world, including a handful of boutique wineries and those that use sustainable, organic or biodynamic farming methods.

The space itself (a preliminary rendering is shown above) will offer a polished rustic feel with dark woods, leather and green accents (including possibly a green chandelier) to bring in the idea of freshness.

Le Méridien Columbus, The Joseph is a development from the Pizzuti Companies, and will be a Starwood Property. The boutique hotel itself will feature 135-rooms, a signature bar, two spa suites, a 24-hour fitness center and meeting and event space. The two properties will open together in early 2015.

CMR operates three other restaurants along the High Street block--The Pearl, Marcella's and Martini.
