Green Beans au Gratin
Makes 8 servings This recipe comes from Cook's Corner, a reader-exchange column in the The Columbus Dispatch Food section.4 tablespoons butter 4 tablespoons flour 1 teaspoon salt 1/8 teaspoon dry mustard 1-1/2 cups milk 1/2 cup grated cheese or Cheese Whiz 3 cups cooked fresh or frozen green beans Grated Parmesan cheese Paprika Slivered almonds (optional)Preheat oven to 350 degrees. Butter a casserole dish. Melt the butter. Add flour, salt and mustard. Simmer until bubbly. Stir in milk. Cook until thickened, stirring constantly. Stir in grated cheese until melted. Combine with green beans. Transfer mixture to prepared casserole. Sprinkle with Parmesan and paprika. Bake 30 minutes or until bubbly. Top with almonds, if desired.
