The Knife: Chinese cleaver

The Owner: Phuong Mai, owner, Indochine Cafe

Mai keeps this Chinese cleaver on hand at all times because it's great for cutting through bones.

While she prefers knives with a comfortable grip and models that are thin and precise, she's not too particular. "I just like sharp knives," she said.
